š ¢ = Story: Familiar Doesn't Mean Simple
Ā
Ā
One of the most interesting things Iāve learned from building Fat Miilk is that people tend to like what they understand. I can tell someone all the details about a coffee, but many just want to know one thing: is it worth their dollar?
Ā
Ā
For years, coffee has rewarded complexity through more tasting notes, processing methods, and explanations. And while thereās ABSOLUTELY a place for that, Iāve found that most consumers arenāt looking for a coffee they need explained to them. Theyāre looking for a coffee they enjoy.
Ā
Ā
I see it every day. Someone takes their first sip of Vietnamese coffee and immediately understands it. The fuller body, the sweetness, the richnessā¦it just clicks. And as someone who spends a lot of time studying consumer behavior, I donāt think this is unique to coffee.
Ā
Ā
Weāre living in a world of infinite options and limited attention. Consumers make decisions faster than ever. What can be understood, communicated, and experienced instantly often has an advantage.
Ā
Ā
Thatās not a knock on complexity. Some of the most incredible coffees in the world require time, context, and education to fully appreciate. But in todayās environment, familiarity and comfort are incredibly powerful. They lower the barrier to entry and create connection.
Ā
Ā
Whatās changed over the last decade is that consumers no longer rely solely on the industry to tell them whatās good. Social media has given people access to stories, cultures, communities, and perspectives that were once difficult to discover.
Ā
Ā
Coffee today is no longer just about quality. As Iāve shared in previous newsletters, itās also about identity, belonging, and finding something that feels authentic to you.
Ā
Ā
Personally, I believe Robusta is one of the best beans to bet on right now. Not because itās ābetterā than everything else, but because at its best, itās approachable, familiar, and deeply connected to the people and cultures that made it what it is.
Ā
Ā
In a world where everything is competing for attention, familiarity often wins.

š = Insight: Robusta is for the People
At Fat Miilk, we roast to order, which gives us an intimate understanding of the beans and the process. With 10+ years in the specialty coffee industry, working in quality control, sourcing, sample roasting, and now production, Iāve never been more excited to share what weāre discovering with Robusta. ā Kim Nguyen, Head of Coffee Quality and Sourcing

Robusta is Comfort
Ā
Ā
An industry friend of mine teaches cupping classes a few times each month and often puts our Robusta on the table alongside several Arabicas. She tells me that her students almost always choose the Robusta as their favorite coffee of the lineup. While that might sound surprising, it also doesnāt surprise me at all.
Ā
Ā
Robusta offers a familiar and comforting flavor that many people naturally connect with. Thatās part of the beauty of this coffee species. It has the ability to create a sense of place and belonging. For many, it tastes like home.
Ā
Ā
Vietnamese Robusta has a fuller body and a sweetness that becomes even more pronounced when paired with milk. Whether served hot or cold, it delivers a comforting drinking experience. It can also be roasted lighter while remaining approachable because it doesnāt develop the sharp acidity that some coffees do. You could call it an entry-level coffee because of its drinkability, but itās never boring.
Ā
Ā
Robusta is Approachable
Ā
Ā
One of the biggest things Iāve learned while working with Robusta is how forgiving it can be.
Ā
Ā
When roasting, thereās a wider window for flavors to come together and for sweetness to shine. When brewing, its higher solubility makes it easier to extract that sweetness consistently. And when drinking it, Robusta performs beautifully with or without milk and sugar.
Ā
Ā
As a beverage, it naturally balances bitterness, sweetness, and creaminess in a way that feels complete and satisfying. Most importantly, it feels familiar.
Ā
Ā
Robusta is Familiar
Ā
Ā
As infants, milk is our first experience with flavor. Its sweetness and richness nourish us while shaping our earliest understanding of comfort.
Ā
Ā
When dark-roasted Robusta meets condensed milk, it taps into something deeply familiar: sweet, creamy, and comforting, now paired with the energy of coffee. The richness and full body of Robusta create a velvety drinking experience that feels nostalgic without trying to be. In many ways, it brings us back home.
Ā
Ā
Iāve come to understand how Robusta is for the people. At its core, it brings people together without pretension. Itās authentic, approachable, and flavorful on its own terms.
Ā

Ā
Ā
š = Pulse: The Return of FamiliarĀ
Ā
Ā
For years, specialty coffee has celebrated complexity, but consumers continue to show us that familiarity matters just as much.
Ā
Ā
The growth of flavored coffees, milk-based beverages, and convenience-driven coffee concepts suggests that people are often looking for something approachable, comforting, and easy to enjoy.
Ā
Ā
This is exactly where Robusta shines. Its fuller body, lower acidity, and ability to pair seamlessly with milk align naturally with how many people already drink coffee today.
Ā
Ā
As the industry evolves, the conversation may become less about whatās considered ābetterā and more about what people genuinely enjoy drinking.Ā
Ā
Ā
For Robusta, thatās a direction worth watching.
