WHAT IS VIETNAMESE COFFEE?

Vietnamese coffee refers to coffee grown and produced in Vietnam, the world’s second-largest coffee exporter and the leading producer of Robusta beans. Robusta thrives in Vietnam's tropical climate and highlands, particularly in regions like the Central Highlands, where rich volcanic soil and ideal elevations create optimal growing conditions.

What makes Vietnamese coffee distinct isn’t just where it’s grown - it’s how it’s brewed and enjoyed. Traditionally, it’s made using a phin filter, a small metal drip brewer that allows hot water to slowly extract the coffee, resulting in a strong, concentrated brew. The flavor is typically bold, earthy, and high in caffeine compared to Arabica varieties.

Culturally, Vietnamese coffee is often prepared with sweetened condensed milk or served over ice, creating a rich and balanced drink that has become a staple of daily life in Vietnam and is gaining popularity around the world.

WHAT IS THE DIFFERENCE BETWEEN ARABICA AND ROBUSTA BEANS?

Arabica and Robusta are the two primary species of coffee beans cultivated and consumed around the world, each with distinct characteristics in flavor, growing conditions, caffeine content, and price.

Arabica beans are known for their delicate, nuanced profiles - often featuring floral, fruity, or acidic notes. They typically grow at higher elevations and require specific climate conditions.

Robusta, on the other hand, is bolder and more intense. Its flavor profile leans toward earthy, nutty, and sometimes woody notes, with a more straightforward and powerful taste. Robusta plants are hardier, more resistant to pests and diseases, and thrive in lower altitudes - making them especially well-suited to Vietnam’s landscape.

At Fat Miilk, we specialize in Robusta, a bean that contains nearly twice the caffeine of Arabica. That higher caffeine content not only delivers a serious energy boost but also adds to the rich, full-bodied flavor that Robusta lovers seek.

WHERE IS YOUR COFFEE SOURCED?

We source directly from smallholder farmers across Vietnam’s Central Highlands, a region known for its ideal Robusta-growing conditions. With the support of our dedicated team on the ground, we carefully vet each farm and work hands-on to ensure consistent quality from seed to sip.

There’s no middleman, no shortcuts - just deep relationships built on trust, transparency, and mutual respect. By staying close to every step of the process, we’re able to prioritize fair pricing, provide ongoing support to our farmers, and help strengthen their harvests year after year.

WHERE DO YOU ROAST YOUR COFFEE?

We proudly roast in-house and only roast to order. This small-batch approach allows us to maintain peak freshness, flavor, and quality in every bag. By controlling the roast from start to finish, we ensure that what you’re drinking is never sitting on a shelf.

DOES YOUR COFFEE HAVE MIILK IN IT?

Fat Miilk beans are 100% roasted coffee without any added dairy, additives, oils, or artificial flavorings.

WHY IS IT CALLED FAT MIILK?

Before Vietnamese coffee was widely recognized for its diverse origins, regions, varietals, and brewing methods, it was most commonly associated with one iconic preparation: Cà Phê Sữa Đá—strong Vietnamese coffee poured over ice and mixed with sweetened condensed milk. That creamy, bold classic is where many people’s journey with Vietnamese coffee begins. It’s also where our name, Fat Miilk, draws inspiration.

We honor the cultural significance and global love for this drink, but our name is also a statement. It signals that there’s more to the story. Vietnamese coffee isn’t just a style - it’s a whole ecosystem of tradition, innovation, and untapped potential. Through our product offerings, storytelling, and brand, Fat Miilk exists to expand that narrative and showcase the richness of Vietnamese coffee beyond the cup.

DO YOU OFFER DECAF COFFEE?

At the moment, we do not offer decaf coffee.

DO YOU SELL READY-TO-DRINK COFFEE?

At the moment, we do not sell ready-to-drink coffee. You can experience our coffee in person at our Chicago storefront or brew it at home with our Vietnamese coffee kit.

WHAT IS THE EXPIRATION DATE FOR YOUR COFFEE?

Coffee doesn’t “expire” in the way fresh produce does, but it does lose freshness and flavor over time. The shelf life depends on how it's stored and whether it’s whole bean (which lasts longer) or pre-ground (which ages faster).

At Fat Miilk, we roast to order in small batches, and each bag is clearly labeled with a roast date. For peak flavor, we recommend enjoying your coffee within 4 months of roasting, though it can stay fresh for up to 6 months if stored in a cool, airtight environment.

HOW DO I STORE MY COFFEE?

To maintain maximum freshness, store your coffee (whether whole bean or ground) in a cool, dark place, away from heat, light, air, and moisture. For best results, use an airtight container and avoid storing coffee in the fridge or freezer, where it’s exposed to moisture and can absorb unwanted odors.

We recommend purchasing smaller quantities and enjoying your coffee within a few weeks of opening.

PHIN BREWING

WHAT IS A PHIN?

A phin is a small metal drip filter traditionally used to brew Vietnamese coffee. It’s a unique tool that falls somewhere between a pour-over and a French press - simple, portable, and essential to the Vietnamese coffee ritual.

The word “phin” comes from the French word filtre, a nod to Vietnam’s colonial history and the lasting influence on its coffee culture.

A phin filter is made up of three main parts:
– A cup-shaped metal container with tiny holes at the bottom where coffee slowly drips through.
– A metal disk that fits snugly inside the chamber to press the grounds and regulate the flow of water.
– A cap that sits on top to retain heat during the brew.

Brewing with a phin is a slower, more intentional process, but the result is a bold, concentrated cup that’s uniquely Vietnamese.

HOW DO I USE A PHIN?

DO I NEED A PHIN TO BREW FAT MIILK COFFEE?

Not at all. While we highly recommend the phin for its authenticity, experience, and bold flavor, you can brew Fat Miilk however you like - French press, pour-over, drip machine, espresso, you name it. Our beans are versatile and taste great across a variety of brewing methods.

WHAT’S THE BEST GRIND SIZE FOR PHIN BREWING?

Grind size can vary slightly depending on the size of the phin’s filter holes, but we generally recommend a moderately fine grind - finer than drip, but not as fine as espresso.

If you choose to have your coffee ground by us, we’ll prepare it to be perfectly dialed in for our phin filters, ensuring an even, smooth extraction every time.

HOW DO I CLEAN MY PHIN?

We recommend hand-washing to preserve both the integrity of the parts and the longevity of the design.

After brewing, simply discard the used grounds, then rinse your phin with warm water and mild dish soap using a non-abrasive sponge or cloth. Let it air dry completely before storing to prevent any moisture buildup.

A little extra care goes a long way in keeping your phin in top shape for years of bold brews.

WHY DOES MY COFFEE TASTE WATERED DOWN AFTER BREWING WITH A PHIN?

If your coffee tastes weak or diluted, it’s likely due to one of three common issues: improper blooming, incorrect coffee-to-water ratio, or grind size.

When brewing with a phin, start with a small pour of hot water - just enough to fully saturate the grounds. Let it sit for 30–45 seconds to allow the coffee to bloom, which releases trapped gases and preps the grounds for optimal extraction. After blooming, fill the phin to the top rim with hot water and let it drip slowly.

For best results, use about 20–25g of coffee (roughly 2 tablespoons) for 100ml of water. If you're using significantly more or less water than coffee, your cup may come out too weak or too bitter.

The phin brewing method is all about balance and patience - a slow, controlled drip yields the bold, rich cup Vietnamese coffee is known for. If your brew still feels off, try adjusting the grind size, brewing time, or the coffee-to-water ratio until it fits your flavor preference.

HOW DO I MAKE VIETNAMESE ICED COFFEE WITH SWEETENED CONDENSED MIILK?

We’re big fans of the classic Cà Phê Sữa Đá—Vietnamese Robusta coffee brewed strong and poured over sweetened condensed miilk and ice. Our bold, dark-roasted coffees are perfect for this recipe and pair beautifully with any additional flavors you want to explore.

To make it:

- Brew your coffee using a phin filter (we recommended one of our darker roasts).

- Pour the hot coffee over condensed milk and stir until fully combined.

- Add ice and enjoy.

While sweetness is personal, we recommend starting with a 7:1 ratio of coffee to condensed miilk for a balanced 12 oz cup.

WHY DOES YOUR PHIN BREW SUCH A SMALL AMOUNT OF COFFEE?

Phins come in different sizes, but our custom phins are designed for a generous single serving. Each one holds about 9.5 oz of water and can yield 10–16 oz of brewed coffee, depending on how many water passes you use.

WHAT IS YOUR RETURN POLICY?

For all non-coffee products, items must be unused, undamaged, and in their original condition to be eligible for a return within 14 days of purchase. Shipping and handling fees are non-refundable. Proof of purchase is required for a full refund, and approved returns will receive a confirmation via email.

Due to the perishable nature of coffee, we do not accept returns on coffee orders. That said, if you’re unsatisfied for any reason, have concerns, or received an incorrect item, please reach out to us within 14 days, and we’ll do our best to make it right.

WHAT SHOULD I DO IF MY PRODUCT IS DAMAGED OR DEFECTIVE?

If your order was damaged or defective upon arrival, we sincerely apologize. Please contact us within 5 days of delivery, and we’ll work with you promptly to make it right.

We’re so sorry for the mix-up! If you received an incorrect item, please contact us within 5 days of delivery, and we’ll make it right—fast. We’ll cover all related shipping costs and fees to ensure the correct item gets to you as quickly as possible.

All shipping fees are automatically calculated at checkout, based on your location, order weight, and shipping method.

All orders are processed, packaged, and shipped from our home base in Chicago, Illinois.

We currently ship to all 50 U.S. states. Any shipping restrictions will be clearly communicated during checkout. Please note that customers are responsible for any additional duties or fees that may apply to their delivery location.

HOW CAN I CANCEL MY ORDER?

If your order has not yet shipped, we’re happy to cancel it and issue a full refund to your original payment method.

Because we roast to order to ensure maximum freshness, please allow 1–3 business days for processing before your order ships. Business days are Monday through Friday, excluding federal holidays.
