Robusta naturally produces a thicker, more persistent crema than Arabica. It also has a fuller body and higher solubility, allowing it to maintain its richness even when paired with milk and cream. When that dense crema meets our light, silky sea salt cream, the result is a texture that's balanced, velvety, and rich without ever feeling heavy.

I think one of the biggest misconceptions about building coffee drinks is that more ingredients automatically make a better beverage. In reality, every component should have a purpose, and the coffee should remain the foundation that everything else is built around.

When I’m not tasting and roasting coffee, I’m usually shopping for ingredients to make dinner or checking out another food spot in the city to add to my list. I’ve always been very food-driven and love the creative process of combining ingredients to make something entirely new, something familiar, or sometimes both.

Coffee is an incredible canvas for flavor, and Robusta is especially well-suited for it because of the richer, sweeter notes it brings to the table. When we create drinks at Fat Miilk, we always keep that in mind and make sure the coffee is doing the heavy lifting, not just acting as a background ingredient.

After working with Robusta for the past couple of years and helping develop drink recipes, I’ve realized that Robusta wants to stand out. It’s an impressively soluble coffee that integrates beautifully with other ingredients without losing its identity.

One of my favorite examples was our Brown Sugar Shaken Espresso special. It highlighted the Robusta without overpowering it. The fuller body and chocolate notes paired naturally with our house-made brown sugar syrup and milk, with just a pinch of salt to enhance the coffee even more. It was coffee-forward, balanced, and landed right where we wanted it, not too bitter and not too sweet.

Our Robusta espresso roast is a beautiful counterpoint to syrups and dairy. It can stand up to rich and creamy flavors just as well as it can shine in something light, icy, and refreshing. It truly is a versatile flavor canvas.

Sweetness Enhancer

We recently collaborated with Hop Butcher, a Chicago brewery known for its incredible lineup of beers. They approached us about creating a summer coffee beer. Up until then, my experience with coffee beer had mostly been limited to stouts, so the idea of a bright, refreshing coffee beer was completely new to me. Nonetheless I was excited to do some experimenting.Â

After roasting and tasting a couple of test batches, I realized that our Robusta really enhanced the sweetness of the blonde ale that it was paired with. I was also pleasantly surprised by how light and refreshing the final beer felt, making it perfect for summer.Â

The coffee notes came through on the front of the palate with sweet chocolate notes and subtle caramel. The hops remained present without overpowering the coffee, creating a beer that felt crisp, balanced, and unmistakably coffee-forward.

No matter what we've paired our Robusta with, it always seems to bring me back to something I strive for in life: balance.

Even in recipes with multiple ingredients competing for attention, Robusta has a way of holding its own while bringing everything together. Never too sweet, never too bitter, just balanced in a way that creates a better overall experience.

As a person who has grown up with a mother who still spoils me with all the delicious home cooked food, I have always appreciated the work that goes into the culinary arts. It feels natural that I've found that same appreciation through coffee. The more I work with Robusta, the more I'm excited to discover everything it's capable of. It really is an ideal flavor canvas.
